Thanksgiving recipe: Keziah's Okra

What better way to get into the festivities of Thanksgiving than trying out new recipes for homemade food? We asked our nurses for their special Thanksgiving recipes and wanted to share a scrumptious one from Keziah called ‘Keziah’s Okra’. We hope you enjoy it as much as we did!
 

Keziah’s Okra

Total time: 30 minutes
 
Ingredients
  • x30 Okra
  • 1 sachet of Mixed spice
  • ½ tbsp Salt 
  • ½ tbsp Pepper
  • 1 tbsp Oil
  • 2 pieces Maggi
  • 2 cups Water (for broth)
  • 2 cups Corn flour
  • 1 cup Water (for fufu)
  • Meat (optional)
 
Process
  1. Boil the meat for approximately 20 minutes.
  2. Add the oil to the pot with the onion and pepper (blind before putting it in the pot).
  3. Add the salt and stir.
  4. Slice the okra and add it to the pot. Wait for 5 minutes and bring the heat down.
  5. Add 2 cups of water to the pot. Allow it to boil, then add the corn flour.
  6. Stir the mixture well and cover the pot. Allow it to simmer for approximately 3 minutes.
  7. Stir again, dish, and enjoy!
